This is my second muffin recipe after i made
Carrot Muffin. I made this muffin for the first time when i was working in
Singapore .I was very love it. I was a healthy recipe. And when i went back to
Indonesia, i was very often to make this Banana Muffin for my two little angels,
Fider and Mathew. They loved this kind of Muffin a lot. .
Ingredients:
- 8 tablespoons (113 grams) sweet butter,
at room temperature
- 3/4 cup (170 gram) granulated sugar
- 2 eggs
- 1 cup (150 gram) unbleached all purpose
flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup (150 gram) whole wheat flour
- 3 large ripe bananas, mash it
- 1 tsp vanilla extract
- ½ cup shelled walnuts, coarsely chopped
- 1 cup chocolate chips(optional)
Method
- Preheat oven at 200°C in normal oven or
180°C in a hot air oven, prepare a muffin pan with muffin paper.
- Cream butter and sugar until light and
fluffy
- Add eggs, one at a time, beating well
after each addition
- Sift all purpose flour, baking soda and
salt together, stir in whole wheat flour and add to creamed mixture,
mixing well
- Fold in mashed bananas, vanilla and
walnuts. Mix at lowest speed (1) on the kitchen aid (if we use it)
- Gently fold the chocolate chips in the
mixture
- Pour mixture into the prepared pan @62
gram
- Bake the muffin in the oven at 200°C in
normal air oven or 180°C in a hot air oven for 25 minutes.
- Cool in pan for 10 minutes, then on
rack.
- Put the muffin onto the plate, serve it
when warm. To get it more delicious, serve the muffin with cheese cream.
